- 4 c butternut squash- 1/2 in diced cubes
- 1/2 medium red onion- finely diced, about 1/2 c
- sea salt- to taste
- 2 Tbsp balsamic vinegar
- 1 sprig rosemary- chopped
- 1/4 c feta cheese- crumbled, can substitute goat cheese

- Preheat to 306°F
- Add 2 Tbsp butter to pan
- Stir ingredients
- Add 4 c butternut squash to pan
- Add 1/2 medium red onion to pan
- Stir ingredients
