Ingredients


  • 3 Tbsp butter - divided
  • 4 c butternut squash
    - 1/2 in diced cubes
  • 1/2 medium red onion
    - finely diced, about 1/2 c
  • sea salt
    - to taste
  • 2 Tbsp balsamic vinegar
  • 1 sprig rosemary
    - chopped
  • 1/4 c feta cheese
    - crumbled, can substitute goat cheese

  • Preheat to 306°F
  • Add 2 Tbsp butter to pan
  • Stir ingredients
  • Add 4 c butternut squash to pan
  • Add 1/2 medium red onion to pan
  • Stir ingredients

  • Add sea salt to taste, about 1/4 tsp

  • Remove ingredients from pan

Finishing Instructions


  • Garnish with feta cheese
