Crispy Skin Salmon with Veggies

Equipment List
- 12-in. skillet
- Large plate
- Chef’s knife
- Spatula
- 3 small bowls for veggies
Ingredients
- 1/3 c olive oil
- 4 salmon fillets- 6-7oz skin on
- 1 red onion- diced into 1/2 inch pieces
- 1 bunch asparagus- chopped into bite sized pieces
- 1 red pepper- diced into bite sized pieces
- 1 pinch sea salt
- 3 cloves garlic- crushed
- 2 sprigs fresh rosemary
- 1 pinch sea salt
- 1 lemon- juiced
- 2 Tbsp butter
Preparation Instructions
- Remove scales on salmon fillets by sliding a chef knife blade across the skin
- Season salmon fillets with salt and pepper
- Rest salmon for 30-45 minutes at room temperature
- Gather ingredients
Cooking Instructions
- Preheat to 211°F
- Add 1/3 c olive oil to pan
- Add 4 salmon fillets to pan skin side down
- Shake pan gently
- Flip ingredients
- Remove salmon from pan and rest on plate skin side up
- Remove all but 1 Tbsp oil from pan and set aside
- Note: Save the rest of the oil for use later in the recipe
- Add 1 red onion to pan
- Stir ingredients
- Stir ingredients
- Remove ingredients from pan
- Add 1 Tbsp of reserved olive oil back to pan
- Stir ingredients
- Add 1 bunch asparagus to pan
- Stir ingredients
- Remove ingredients from pan
- Add 1 red pepper to pan
- Stir ingredients
- Return onions and asparagus to pan
- Stir ingredients
- Add 1 pinch sea salt to pan
- Remove ingredients from pan
- Wash out pan with cold water to cool off
- Heat ingredients
- Add 1 Tbsp reserved olive oil to pan
- Add 3 cloves garlic to pan
- Stir ingredients
- Add 2 sprigs fresh rosemary to pan
- Stir ingredients
- Add 1 pinch sea salt to pan
- Add 1 lemon to pan
- Stir ingredients
- Add 2 Tbsp butter to pan
- Stir ingredients
- Add vegetables back to pan and toss together
- Remove ingredients from pan
