Equipment List


  • 12-in. skillet
  • Large plate
  • Chef’s knife
  • Spatula
  • 3 small bowls for veggies

Ingredients


  • 1/3 c olive oil
  • 4 salmon fillets
    - 6-7oz skin on
  • 1 red onion
    - diced into 1/2 inch pieces
  • 1 bunch asparagus
    - chopped into bite sized pieces
  • 1 red pepper
    - diced into bite sized pieces
  • 1 pinch sea salt
  • 3 cloves garlic
    - crushed
  • 2 sprigs fresh rosemary
  • 1 pinch sea salt
  • 1 lemon
    - juiced
  • 2 Tbsp butter

Preparation Instructions


  • Remove scales on salmon fillets by sliding a chef knife blade across the skin

  • Season salmon fillets with salt and pepper

  • Rest salmon for 30-45 minutes at room temperature
  • Gather ingredients

Cooking Instructions


  • Preheat to 211°F
  • Add 1/3 c olive oil to pan
  • Add 4 salmon fillets to pan skin side down
  • Shake pan gently
  • Flip ingredients
  • Remove salmon from pan and rest on plate skin side up
  • Remove all but 1 Tbsp oil from pan and set aside
  • Note: Save the rest of the oil for use later in the recipe
  • Add 1 red onion to pan
  • Stir ingredients
  • Stir ingredients
  • Remove ingredients from pan
  • Add 1 Tbsp of reserved olive oil back to pan
  • Stir ingredients
  • Add 1 bunch asparagus to pan
  • Stir ingredients
  • Remove ingredients from pan
  • Add 1 red pepper to pan
  • Stir ingredients
  • Return onions and asparagus to pan
  • Stir ingredients
  • Add 1 pinch sea salt to pan
  • Remove ingredients from pan
  • Wash out pan with cold water to cool off
  • Heat ingredients
  • Add 1 Tbsp reserved olive oil to pan
  • Add 3 cloves garlic to pan
  • Stir ingredients
  • Add 2 sprigs fresh rosemary to pan
  • Stir ingredients
  • Add 1 pinch sea salt to pan
  • Add 1 lemon to pan
  • Stir ingredients
  • Add 2 Tbsp butter to pan
  • Stir ingredients
  • Add vegetables back to pan and toss together
  • Remove ingredients from pan
