Truffle Oil Chicken Marsala

- 10" non stick pan
- Parchment paper
- Shallow bowl/plate x3
- Mallet
- Grater for cheese
- Plate to place chicken on
- Small bowl
Ingredients
- 4 Tbsp butter
- 4 thinly sliced chicken breasts- about 1/4 pound each
- 2 shallots- diced
- 2 c mushrooms- sliced crimini or white button
- 1 Tbsp white truffle oil
- 3 sprigs fresh thyme
- 0.5 oz morel mushrooms- reconstituted from dried and roughly chopped
- 3/4 c marsala wine
- concentrated chicken stock
- 2 tsp better than bouillon chicken base
- 2 Tbsp water
- egg mixture
- 2 large eggs
- 1/4 c water
- salt and pepper- to taste
- 1 c flour- split - 1/2 c and 1/2 c in shallow dishes
- shredded parmesan cheese- for garnish
Preparation Instructions
- Gather all ingredients. Measure and prep. Set aside.
- Rehydrate morel mushrooms according to packaging instructions
- Dice shallots and slice mushrooms
- In a small bowl, make concentrated chicken stock with boullion and water
- Place chicken between two parchment papers. Using a mallet, flatten the chicken to a 1/4" thickness.
- Season chicken with salt and pepper to taste. Rest chicken for 30 minutes before cooking
- In a shallow bowl, crack eggs and add water. Combine well.
- Divide flour (1/2 c each) between two plates/bowls
- Right before putting the chicken in the pan, dredge chicken in flour, then immediately in the egg mixture, and then in the second bowl of flour

- Preheat to 248°F
- Add 4 Tbsp butter to pan

- Dredge 2 chicken breasts in flour-egg-flour and add to pan
- Flip chicken breasts
- Remove chicken from pan and place on a plate
- Dredge 2 chicken breasts in flour-egg-flour and add to pan
- Flip ingredients
- Remove ingredients from pan and place on a plate
- Add ingredients to pan
- Add 2 c mushrooms to pan
- Add 1 Tbsp white truffle oil to pan
- Add 3 sprigs fresh thyme to pan
- Stir ingredients
- Add 0.5 oz morel mushrooms to pan
- Stir ingredients
- Stir ingredients

- Add 3/4 c marsala wine to pan
- Add concentrated chicken stock to pan
- Stir ingredients
- Return chicken pieces back to pan
- Flip chicken pieces
- Remove ingredients from pan
Finishing Instructions
- Place chicken on a plate and cover with mushroom mixture
- Top with grated parmesen cheese
