Equipment List
- Large Dutch oven or heavy-bottom pot
- Silicone spatula
- Colander
- Small bowl to place excess grease in
- Spoon
Ingredients
- 1 lb bacon- diced
- 1 small sweet onion- diced
- 1 lb lean hamburger
- 2 cloves garlic- minced
- 1 tsp salt
- 1/2 t black pepper
- 3 15 oz cans pork and beans
- 15 oz can light kidney beans- drained and rinsed
- 1/2 c brown sugar
- 1/4 c beer
- 1/4 c chipotle sauce- can substitute sweet chili sauce
- 3/4 c ketchup
- 2 t liquid smoke
Preparation Instructions
- Dice bacon
- Dice onion
- Mince garlic
- Drain and rinse kidney beans
Cooking Instructions
- Turn on heat just above medium
- Add 1 lb bacon to pan
- Stir ingredients
- Continue stirring bacon occasionally, scraping bottom of pan
- If bacon renders a lot of fat, push cooked bacon to the side of the pot, tilt pot so excess grease will pool to the side. Use a large spoon to remove, leaving 1/4-1/3 c of the grease in the pot.
- Add 1 small sweet onion to pan
- Stir ingredients
- Add 1 lb lean hamburger to pan
- Break up hamburger into very small pieces as it cooks, stirring frequently
- Add 1 tsp salt and 1/2 t black pepper to pan

- Add 2 cloves garlic to pan

- Add 3 15 oz cans pork and beans and 15 oz can light kidney beans to pan
- Stir ingredients
- Add 1/2 c brown sugar to pan
- Add 1/4 c beer to pan
- Add 1/4 c chipotle sauce to pan
- Add 3/4 c ketchup to pan
- Add 2 t liquid smoke to pan
- Stir ingredients thoroughly
- Continue stirring occasionally as mixture simmers and thickens

- Remove from heat
