Equipment List


  • Dutch oven or large, heavy-bottom pot
  • Hamburger chopper
  • Veggie peeler

Ingredients


  • 1 Tbsp olive oil
  • 1 lb lean ground beef
  • Small red onion
    - diced small
  • 3 cloves garlic
    - minced
  • 1/8 c white wine
    - can substitute red wine
  • 1/2 c carrots
    - peeled and diced small
  • 1/2 c red pepper
    - diced small
  • 1/2 c mushrooms
    - diced small
  • 5 Tbsp tomato paste
  • 1 Tbsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes
  • 4 c chicken stock
  • 28 ounce can crushed tomatoes
  • 1 Tbsp sugar
  • 13 ounces spaghetti noodles
    - broken in half
  • 3/4 c grated parmesan cheese

Preparation Instructions


  • Dice red peppers, small dice

  • Wipe mushrooms with damp cloth to remove dirt. Remove stems. Dice small.

  • Peel and dice carrots, small dice

  • Mince garlic
  • Break spaghetti noodles in half

Cooking Instructions


  • Preheat to 188°F
  • Add 1 Tbsp olive oil to pan
  • Add Small red onion to pan
  • Stir ingredients
  • Add 1 lb lean ground beef to pan
  • Use hamburger chopper or spatula to break up hamburger as it cooks
  • Add 3 cloves garlic to pan
  • Stir ingredients
  • Add 1/8 c white wine to pan
  • Stir ingredients, scraping bottom of pan to deglaze
  • Stir ingredients
  • Add 1 Tbsp salt , 1/2 tsp black pepper , 1 tsp Italian seasoning , 1 tsp dried basil , 1 tsp dried oregano and 1/4 tsp crushed red pepper flakes to pan
  • Stir ingredients
  • Add 1/2 c carrots to pan
  • Add 1/2 c red pepper to pan
  • Stir ingredients
  • Add 1/2 c mushrooms to pan
  • Stir ingredients
  • Add 5 Tbsp tomato paste to pan
  • Stir ingredients, mashing tomato paste to incorporate
  • Stir ingredients
  • Add 4 c chicken stock to pan
  • Add 28 ounce can crushed tomatoes to pan
  • Add 1 Tbsp sugar to pan
  • Stir ingredients
  • Stir ingredients
  • Once the liquid comes to a boil, add 13 ounces spaghetti noodles to pan
  • Note: Add noodles in batches to avoid sticking

  • Uncover ingredients
  • Stir ingredients

  • Add 3/4 c grated parmesan cheese to pan

Finishing Instructions


  • Serve with a crusty bread.
