Equipment List


  • 2 small bowls

  • Wok or large pan with higher sides
  • Whisk

Ingredients


  • 3 Tbsp vegetable oil
    - divided
  • 2 eggs
  • 1/2 lb raw shrimp
    - peeled, deveined, cut into bite-size pieces
  • 2/3 c carrots
    - peeled and diced small
  • 1/2 large onion
    - diced small
  • 2/3 c red pepper
    - seeded and diced small
  • 3 cloves garlic
    - minced
  • 4 c cooked white rice
    - preferably day old and chilled
  • 5 Tbsp soy sauce
  • 3 Tbsp oyster sauce
  • 1 tsp hot chili oil
  • 1 Tbsp brown sugar
  • 1 tsp black pepper
  • 2 c pineapple
    - peeled, cored, & cut into bite-size pieces
  • 1/2 c frozen peas
  • 2 Tbsp chives
    - can substitute green onions

Preparation Instructions


  • Peel and dice carrots

  • Mince garlic
  • Chop chives
  • Peel, core, and dice pineapple
  • Chop shrimp into bite-size pieces
  • Recipe cooks quickly, so make sure to have all ingredients measured in advance.

Cooking Instructions


  • Preheat to 133°F
  • While wok is preheating, whisk 2 eggs in small bowl
  • Add 1 tsp oil to pan
  • Add 2 eggs to pan
  • Whisk eggs as they cook
  • Remove eggs to a plate and set aside
  • Add 1 tsp oil to pan
  • Add 1/2 lb raw shrimp to pan
  • Stir shrimp frequently as they cook
  • Remove shrimp to a plate and set aside
  • Add remaining oil to wok
  • Add 2/3 c carrots to pan
  • Add 2/3 c red pepper to pan
  • Add 1/2 large onion to pan
  • Stir ingredients
  • Continue sautéing vegetables, stirring frequently
  • As vegetables are cooking, create sauce by adding 5 Tbsp soy sauce, 3 Tbsp oyster sauce, 1 tsp hot chili oil, 1 Tbsp brown sugar, and 1 tsp black pepper to small bowl and whisk to combine, then set aside
  • Continue stirring ingredients
  • Add 3 cloves garlic to pan
  • Stir ingredients
  • Add 4 c cooked white rice to pan
  • Use a sturdy, flat-edge spoon to separate rice
  • Add prepared sauce mixture to pan
  • Stir ingredients, continuing to separate rice, ensuring that every piece of rice is separated and coated with the sauce
  • Add prepared eggs back to pan
  • Add prepared shrimp back to pan
  • Add 2 c pineapple to pan
  • Stir ingredients
  • Stir ingredients
  • Add 1/2 c frozen peas to pan
  • Stir ingredients
  • Add 2 Tbsp chives to pan
  • Stir ingredients
