Chicken Tortilla Soup

Equipment List
- Large Dutch oven or heavy-bottom pot
- Bowl
- Tongs
- Silicone spoon or spatula for stirring
Ingredients
- 2 Tbsp olive oil
- 1 red onion- diced small
- 1 poblano pepper- seeded and diced
- 1 jalapeño- seeds and veins removed, diced
- 4 cloves garlic- minced
- 1/4 c white wine
- 2 tsp chipotle in adobo sauce- no peppers or seeds, just sauce
- 4 c chicken broth
- 1 can diced fire-roasted tomatoes
- 2 limes- one juiced, one cut into 6 wedges
- 2 tsp salt
- 2 tsp chili powder
- 2 tsp Tajin
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 lb boneless, skinless chicken breast- fat trimmed and cut into thick strips
- 1 can black beans- drained and rinsed
- 1 can sweet corn- drained
- 1/4 c cilantro- finely chopped
- 2 avocados- peeled and cut into bite-size chunks
- To taste Cotija cheese- for topping
- To taste tortilla strips- for topping
Preparation Instructions
- Trim chicken of fat and cut into thick strips.
- Measure all ingredients
- Dice onion and peppers, chop cilantro, and mince garlic.
- Juice lime.
- Drain corn.
- Drain beans and rinse.
- Drain corn, and drain and rinse beans
Cooking Instructions
- Turn on heat to a medium setting
- Add 2 Tbsp olive oil to pan
- Add 1 red onion , 1 poblano pepper and 1 jalapeño to pan

- Add 4 cloves garlic to pan
- Stir ingredients
- Add 2 tsp chipotle in adobo sauce to pan

- Add 1/4 c white wine to pan
- Stir and deglaze pan by scraping the bottom to incorporate any brown bits
- Add 4 c chicken broth to pan
- Add 1 can diced fire-roasted tomatoes to pan
- Add lime juice to pan
- Add all seasonings to pan
- Stir ingredients
- Allow to come to a boil.
- Stir ingredients
- Add 1 lb boneless, skinless chicken breast to pan
- Reduce hit and continue to gently boil
- Stir ingredients
- Turn heat to a low setting and remove chicken to a large bowl
- Add 1 can sweet corn to pan
- Add 1 can black beans to pan
- Stir ingredients
- While soup continues to cook, use 2 forks to shred chicken.
- Return shredded chicken to pot.
- Add 1/4 c cilantro to pan
- Stir ingredients
- Heat through and see finishing steps.
Finishing Instructions
- To serve, ladle into bowls and top with Cotija cheese, cilantro leaves, sour cream, avocado chunks, and tortilla strips. Enjoy!
