Equipment List


  • Small bowl
  • Small microwave-safe bowl
  • Medium bowl
  • Medium non-stick skillet
  • Hamburger chopper
  • Plastic wrap
  • Paper towels

Ingredients


  • 1 yellow onion
    - small, thinly sliced
  • 1 lime
    - quartered
  • 1/4 tsp sugar
  • 1 long green pepper
    - halved, cored, thinly sliced
  • 1 orange
    - halved and juiced
  • 2 Tbsp cilantro
    - chopped
  • 4 Tbsp sour cream
  • 1 Tbsp Southwest Spice Blend
    - divided
  • 2 tsp water
  • 4 tsp olive oil
    - divided
  • 10 oz ground pork
  • 1 pkg Tex-Mex Paste
  • 6 flour tortillas
  • To taste salt and pepper

Preparation Instructions


  • Prepare veggies, as directed.

  • Juice lime and orange.
  • Chop cilantro.

Cooking Instructions


  • To a small bowl, add 1/4 of the sliced onion, juice from half the lime, 1/4 tsp sugar, & a pinch of salt.
  • Stir ingredients
  • Cover bowl with plastic wrap and microwave for 30 seconds. Set aside.
  • To another small bowl, add sour cream, 1/4 tsp Southwest Spice, salt and pepper (to taste), and 2 tsp water.
  • Stir ingredients
  • Set aside.
  • Place pan on burner and turn on heat to medium setting.
  • Add 2 tsp olive oil to pan
  • Swirl pan to coat
  • Add remaining onions plus long green pepper to pan.
  • Note: The long green pepper was not included in the ingredients sent from Hello Fresh, so I was unable to add them.
  • Saute ingredients
  • Continue sautéing, stirring occasionally as veggies brown.
  • Remove onions to a plate and set aside.
  • Carefully wipe out pan and return to heat.
  • Add 2 tsp olive oil to pan
  • Swirl to coat pan
  • Add remaining Southwest Spice to pan
  • Using hamburger chopper, break up pork as it cooks.
  • Add 1 pkg Tex-Mex Paste to pan
  • Add juice of one orange to pan
  • Add juice of 2 lime wedges to pan
  • Add remaining Southwest Spice blend to pan
  • Stir ingredients
  • Season with salt and pepper, to taste
  • Stir ingredients
  • Remove from heat

Finishing Instructions


  • Wrap tortillas in damp paper towels and microwave for 30 seconds.
  • Assemble tacos, filling with pork and veggies then topping with crema, pickled onion (drain first), and cilantro. Squeeze any remaining lime wedges over tacos, if desired.
