Equipment List
- 6 qt non stick pot
- Spatula
- Fine mesh strainer
- Small bowl
- Mason jar
- Small plate for tajin rim
- Masher
- Muddle for smashing mango and jalepeno in glass
Ingredients
- Mango Simple Syrup
- 1 c fresh mango- diced into 1/2" pieces
- 1/2 c sugar
- 1/2 c water
- Spicy Mango Cooler Mocktail
- 1 Tbsp leftover mango from simple syrup
- 2 slices jalepeno- thinly slices
- 1.5 oz mango Simple syrup
- 1/2 lime lime juice- squeeze lime juice
- mango sparkling water- fill the rest of the glass with the sparkling water
- tajin- use to put on the rim of the glass
Preparation Instructions
- Measure and prepare ingredients. Set aside.
Cooking Instructions
- Preheat to 107°F
- Add 1/2 c water to pan
- Add 1 c fresh mango to pan
- Add 1/2 c sugar to pan
- Using a masher, mash the mango pieces
- Stir ingredients
- Stir ingredients
- When the syrup is boiling , then turn down to a simmer.
- Remove from the heat.
Finishing Instructions
- Place fine mesh strainer on top of a bowl and strain the mango syrup. Save the liquid in the bowl. Use the mango pieces in the strainer for the Spicy Mango Cooler Mocktail.
- Place syrup in an air tight container like a mason jar. Keep in the refrigerator for up to 2 weeks.
- Spicy Mango Cooler Mocktail - Tajin rim - rub a lime slice around the glass. Then pour tajin into a plate. Run the rim of glass in the tajin.
In a glass, add the following: 1 Tbsp diced fresh mango, 2 sliced jalapeños. Muddle the mango and jalepeno. Then add 1.5 oz mango simple syrup, a squeeze of lime to taste, ice and mango sparkling water. Top with a mango and tajin garnish.
