Equipment List


  • Large pot or Dutch oven

Ingredients


  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 1/2 c onions
    - diced small
  • 4 cloves garlic
    - minced
  • 1 c vodka
  • 1 1/2 c chicken broth
  • 28 oz can fire-roasted crushed tomatoes
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red chili flakes
  • 12 oz penne pasta
  • 3/4 c heavy cream
  • 2 Tbsp basil
    - chopped
  • 1 Tbsp parsley
    - chopped

Cooking Instructions


  • Preheat to 95°F
  • Add 1 Tbsp butter and 1 Tbsp olive oil to pan
  • Add onions
  • Stir until soft & translucent
  • Add 1 c vodka to pan
  • Cook until reduced
  • Add 4 cloves garlic to pan
  • Saute until fragrant
  • Add 1 1/2 c chicken broth to pan
  • Add 28 oz can fire-roasted crushed tomatoes to pan
  • Add 1 tsp salt to pan
  • Add 1/4 tsp pepper to pan
  • Add 1/2 tsp dried oregano to pan
  • Add 1/4 tsp crushed red chili flakes to pan
  • Add pasta
  • Bring to a boil, then reduce heat a bit and cook until al dente
  • Add 3/4 c heavy cream to pan
  • Add 2 Tbsp basil and 1 Tbsp parsley to pan
  • Stir ingredients

Finishing Instructions


  • Garnish with basil & shredded parmesan cheese
