Ingredients
- 1 Whole Chicken- cut into 8 pieces or you can buy bone-in chicken cut already
- Chicken Seasoning
- 1 tsp Granulated Garlic
- 1 tsp Cayenne Pepper
- 1 tsp Salt
- 1 tsp Black Pepper
- Overnight Soak
- 4 c Buttermilk
- Flour Mixture
- 2-1/2 c Flour
- 1 tsp Baking Powder
- 1 tsp Paprika
- 1 tsp Cayenne Pepper
- 1 Tbsp Salt
- 1 Tbsp Granulated Garlic
- 2 tsp Black Pepper
- Batter
- 2 c Buttermilk
- 3 Eggs- beaten
- 4 Tbsp Hot Sauce - used Frank Red Wing
- 48 oz Canola oil- for frying
Preparation Instructions
- Make sure you have all ingredients in stock.
- Cut whole chicken into 8 pieces
- Season chicken with garlic, cayenne pepper, salt and pepper.
- Place seasoned chicken in an appropriate size bowl with 4 c of buttermilk. Tightly cover bowl and store in the refrigerator for 8-12 hrs or overnight.
- When ready to fry the chicken, remove the chicken from buttermilk and discard this buttermilk. Place chicken on a plate. Measure and prepare ingredients.
- In a bowl combine flour mixture with flour, baking powder, paprika, cayenne powder, garlic salt and pepper. Set aside.
- In a bowl, beat 3 eggs. Then slowly mix in the buttermilk and hot sauce till we'll combined.
- Using a tong, dredge chicken in flour mixture, then wet mixture then back into the flour mixture. Place chicken on a plate. Repeat till all chicken done.
- Prepare baking sheet with papertowels then place baking rack on top. Set aside.
- Place pot on stovetop and pour oil in.
Cooking Instructions
- Preheat to 332°F
- Slowly place 4 pieces of chicken into the pot.
- Note: Remove chicken from oil
Finishing Instructions
- Place cooked chicken on baking rack.
- Repeat the cooking of chicken till all chicken cooked.
- Serve warm.
