Equipment List
- 2 Cutting boards or surfaces (one for raw chicken and one for cooked chicken)
- Plate to remove chicken to
- Tongs
- 10” or 12” skillet with lid
- Small bowl
- Small whisk
Ingredients
- 1/2 tsp salt
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1 tsp Tajin
- 1/2 tsp smoked paprika
- 1 tsp chipotle powder- can substitute chili powder
- 1 lb boneless, skinless chicken breast- trimmed of fat and butterflied
- 1 1/2 Tbsp olive oil
- 3 limes- 2 Tbsp of lime juice & remainder sliced into wedges for serving
- 1 yellow onion- diced
- 2 cloves garlic- minced
- 14.5 oz can petite diced fire-roasted tomatoes
- 1 c chicken broth
- 1 c long-grain rice- uncoooked
- 1/4 c white wine
- 2 Tbsp chives- chopped
- 2 Tbsp cotija cheese
- 1 jalapeno- seeded and diced
Preparation Instructions
- Trim chicken breast of fat and butterfly the breasts.
- Measure out all ingredients.
- Dice onion
Cooking Instructions
- Add 1/2 tsp salt, 1 tsp cumin, 1/2 tsp garlic powder, 1 tsp Tajin, 1/2 tsp smoked paprika, and 1 tsp chipotle powder to small bowl and whisk to combine
- Use half of seasoning mixture to season both sides of the chicken, reserving the rest for later
- Place pan on burner and turn on heat to a medium setting
- Add 1 1/2 Tbsp olive oil to pan
- Swirl to coat bottom of pan
- Add seasoned chicken breast to pan
- Flip chicken breast
- Remove chicken breast to a plate and set aside
- Add 1 yellow onion to pan
- Stir ingredients
- Stir ingredients
- Add 1 jalapeno to pan
- Stir ingredients
- Add remaining spice mixture to pan
- Add 2 cloves garlic to pan
- Stir ingredients
- Add 1/4 c white wine to pan and scrape bottom to deglaze
- Stir ingredients
- Stir ingredients
- Add 1 c chicken broth to pan
- Add 14.5 oz can petite diced fire-roasted tomatoes to pan
- Add 2 Tbsp lime juice
- Stir ingredients
- Add 1 c long-grain rice to pan
- Stir ingredients
- Add chicken breast back to pan
- When it comes to a gentle boil, cover ingredients and turn heat to low
- Turn off heat and allow to sit for 5 minutes with the lid on
- Uncover ingredients

Finishing Instructions
- Remove chicken to a cutting board and cut into strips or bite-size pieces.
- Stir rice.
- Return chicken to pan and top with lime slices and cotija cheese.
- If chicken is drier than you would like, chop it into smaller pieces or shred it, and add stir in additional chicken broth and a little lime juice before you return to pan.
