Equipment List
- Dutch oven or large heavy-bottom pot
- Cheese grater
Ingredients
- 3 c whole milk
- 2 c chicken stock
- 16 oz Cavatappi pasta- can use other twisty pasta
- 1 tsp salt
- 1/2 tsp ground mustard
- 1/4 tsp black pepper
- 2 c sharp cheddar cheese- 8 oz, freshly shredded
- 1 c gouda cheese- 4 oz, freshly shredded

- Shred cheese
Cooking Instructions
- Preheat to 161°F
- Add 3 c whole milk to pan
- Add 2 c chicken stock to pan
- Add 16 oz Cavatappi pasta to pan
- Stir ingredients
- Note: Stir frequently, scraping bottom of pot to avoid noodles sticking.
- Note: You want most of the liquid absorbed and the pasta to be tender. You can adjust time up or down to accommodate the type of pasta you are using.
- Remove from heat
- Add 1 tsp salt , 1/2 tsp ground mustard and 1/4 tsp black pepper to pan
- Add 2 c sharp cheddar cheese and 1 c gouda cheese to pan
- Stir ingredients
- Stir ingredients until cheese is fully melted. Serve immediately.
Finishing Instructions
- Sauce will thicken as it sits. Add milk to make it creamier, if needed.
