Equipment List
- 8 qt stock pot
- Collander
- Ladle
- Citrus juicer
Ingredients
- 3 Tbsp Olive oil
- 2 c onion- chopped
- 1/2 c sweet potato- peeled and diced
- 1-1/2 c carrots- peeled and chopped
- 2 tsp garlic- minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground tumeric
- 2 c lentils- picked and drained
- 6 c vegetable broth
- 1/2 lemon- freshly squeezed
- 2 c kale- chopped
- parsley- optional garnish - chopped
- salt- to taste
- pepper- to taste
Preparation Instructions
- Measure and prepare ingredients. Set aside.
- Use a collander to rinse the lentils.
Cooking Instructions
- Preheat to 360°F
- Add 3 Tbsp Olive oil to pan
- Add 2 c onion to pan
- Stir ingredients
- Add 1-1/2 c carrots and 1/2 c sweet potato to pan
- Stir ingredients
- Add 2 tsp garlic to pan
- Stir ingredients
- Add pepper and salt to pan
- Add 1 tsp ground cumin , 1/2 tsp ground tumeric and 1/2 tsp ground coriander to pan
- Stir ingredients
- Add 6 c vegetable broth to pan
- Once boiling then lower the heat to a simmer.
- Note: If you prefer your soup to be soupier then add more vegetable broth.
- Remove from heat.
Finishing Instructions
- Add chopped kale.
- Add 1/2 lemon juice.
- Taste and add more lemon, salt and pepper to taste.
- Garnish with chopped parsley.
