Equipment List
- Cheese grater
- Medium-size pot
- Whisk
- Large mixing bowl
- Small bowl
Ingredients
- 4 tsp cornstarch- divided
- 1 c plus 1 Tbsp white wine- divided
- 1 1/2 c Swiss cheese- freshly shredded
- 1 1/2 c Gruyère cheese- freshly shredded
- 1 large clove garlic- peeled and halved
- 1 1/2 tsp lemon juice- freshly squeezed
- 1/4 tsp garlic powder
- 1/8 tsp Worcestershire sauce
- Optional dippers- cubed French bread, green apples, vegetables, ham cubes
Preparation Instructions
- Shred cheeses
- Have all dippers prepared to serve immediately.
Cooking Instructions
- Add 2 tsp cornstarch and 1 Tbsp of wine to small bowl. Whisk until fully combined and set aside.
- Add both cheeses and remaining 2 tsp cornstarch to large mixing bowl. Stir to thoroughly coat, then set aside.
- Place pot on burner.
- Turn on heat to low.
- Rub halved garlic clove along inside of pot, then discard garlic clove.
- Add remaining wine to pot.
- Note: Looking for small bubbles to form around edge and bottom of pot
- Add 1 1/2 tsp lemon juice to pot.
- Stir ingredients
- Add one handful of cheese mixture to pot, stirring constantly until fully melted before adding the next handful.
- Repeat, adding another handful of cheese mixture and stir constantly.
- Add next handful of cheese mixture and stir until completely melted.
- Add remaining cheese mixture, stirring until completely melted and fully combined.
- Add 1/4 tsp garlic powder to pot.
- Add 1/8 tsp Worcestershire sauce to pot.
- Stir ingredients
- Whisk cornstarch and wine mixture, then gradually add to pot, stirring constantly.
- Stir ingredients continuously until fully combined and smooth.
- Serve immediately, and keep heated while serving.
Finishing Instructions
- Serve with dippers of choice.
- Keep heated while serving.
