Ingredients
- oil
- 1 lbs chicken- Chicken breast fillet
- 1/2 c onion- sliced thin
- 1 Tbsp garlic- mince
- 1/2 red peppers- julienne
- 1/2 orange peppers- julienne
- 2 heads butter lettuce
- garnish
- cilantro - chopped
- cojita - crumbled
- marinade
- 1\4 c Extra Virgin Olive Oil
- 1\4 c lime juice
- 1 tsp kosher salt
- 1\2 tsp ground cumin
- 1 Tbsp garlic- minced
- 1\4 tsp ground chipotle
- 2 Tbsp paprika
- 2 Tbsp chili powder
Preparation Instructions
- In a small bowl, stir marinade ingredients together - olive oil, lime juice, salt, cumin, garlic, chipotle, paprika, and chili powder.
- Place chicken in gallon Ziploc bag. Pour marinade over the chicken. Let air out of the bag and seal it. Place in refrigerator for 2-6 hours.
- Rinse butter lettuce in cold water. Dry with a paper towel. Set aside.
Cooking Instructions
- Preheat to 302°F
- Add oil to pan
- Add 1 lbs chicken to pan
- Flip 1 lbs chicken
- Add 1/2 c onion to pan
- Add 1 Tbsp garlic to pan
- Stir ingredients
- Stir ingredients
- Add 1/2 red peppers to pan
- Add 1/2 orange peppers to pan
Finishing Instructions
- Place fajita chicken and peppers in butter lettuce
- Add cilantro and cojita
