Ingredients
- 2 Tbsp olive oil
- 1 c yellow onion- chopped
- 1/2 c celery- chopped
- 8 oz mushroom- chopped - fresh button or cremini
- 3 c vegetable broth- plus, extra if you plan to reheat the gravy
- 2 sprigs of thyme
- 1/4 c plant based butter- unsalted
- 1/4 c flour- all-purpose
- 1/4 c dry white wine
- 1 Tbsp soy sauce
- 1/4 tsp ground black pepper- plus more to your taste
- salt- to taste
Preparation Instructions
- Measure and prepare ingredients. Set aside.
- Gather bowl and strainer. You strain gravy during the Cooksy recipe. Set bowl & strainer near stovetop.
Cooking Instructions
- Preheat to 273°F
- Add 2 Tbsp olive oil to pan
- Add 1 c yellow onion to pan
- Add 1/2 c celery to pan

- Add 8 oz mushroom to pan

- Add 3 c vegetable broth to pan
- Note: You are going to bring gravy to a boil then once boiling bring to a simmer.
- Note: Bring to a simmer.
- Stir ingredients
- Add 2 sprigs of thyme to pan
- Remove pot from stovetop and strain mushroom mixture. Set aside till mushroom broth is needed.
- Put empty pot on stovetop.
- Add 1/4 c plant based butter to pan
- Note: Melt butter.
- Stir ingredients
- Bring to a boil.
- Add 1/4 c flour to pan
- Whisk continuously
- Keep whisking often
- Bring to a simmer
- Gradually add in broth mixture. Whisk often.
- Bring to a boil. Whisk often.
- Add 1/4 c dry white wine to pan
- Add 1 Tbsp soy sauce to pan
- Add 1/4 tsp ground black pepper to pan
- Note: Once boiling then bring to a simmer to thicken gravy.
- Remove from heat.
Finishing Instructions
- Add salt and pepper to taste.
- Serve immediately.
- If reheating on a stovetop then whisk in a little broth to thin out gravy.
