Salted Brown Butter Rice Krispies
The brown butter along with the slightly salty taste make these chewy treats a delight to eat.

Equipment List
- 3 qt non-stick pot
- Silicone spatula
- 9 x 9 pan
- Parchment paper or cooking oil spray
Ingredients
- 5 c rice krispies
- 10 oz mini marshmallows- 1-10 oz bag. Set 2 c of mini marshmallows aside.
- 1 stick salted butter- cut into 1 Tbsp squares , butter soften to room temperature
- 1/8 tsp coarse sea salt
- Royal Icing- optional
- 4 c powdered sugar
- 3 T meringue powder
- 5 T warm water- add more water to get to the right consistency
Preparation Instructions
- Measure and prepare ingredients. Set aside.
- Set 2 c of mini marshmallows aside. It will be added at the end of the recipe.
- Line pan with parchment paper or spray with cooking oil spray
Cooking Instructions
- Preheat to 179°F
- Add 1 stick salted butter to pan

- Note: When browning the butter, it will foam and there will be a nutty smell. Also, the butter will turn a golden brown color.

- Add mini marshmallows except the 2 c set aside
- Keep stirring till marshmallows melt completely
- Turn off the heat
- Add 5 c rice krispies to pan
- Keep stirring till blended evenly
- Add 2 c of mini marshmallows
- Stir till marshmallows are blended evenly
- Remove pot from cooktop
Finishing Instructions
- If you want your rice krispies a little salty then add the 1/8 salt to rice krispies mixture and stir till blended
- Place mixture into a parchment lined or cooking spray oiled pan
- Lightly press down the mixture with a spatula, parchment paper or your hands.
- Cool on counter for 5-10 minutes then cut the rice krispies using a knife.
- Easter Rice Krispies - flatten the Rice Krispies to 1/2" (use a rolling pin). Cut out pieces with a cookie cutter. Then make Royal Icing - in a mixer, add powdered sugar, meringue powder and warm water. Add more warm water to get to the consistency you desire. Mix till blended well. Place Royal icing in a piping bag with a tip then decorate.
- Stars- Using a rolling pin, flatten rice krispies to a 1/2" thickness. Cut out stars with a star cookie cutter. Melt white chocolate a instructed on package. Place the melted chocolate in a piping bag and drizzle the stars. Then add sprinkles
