  • Medium mixing bowl
  • Small bowl

  • Plastic wrap

Ingredients


  • 1/2 Tbsp olive oil
  • 3 pieces chicken thighs
    - boneless skinless
  • 2/3 c pineapple juice
    - equal to about 1- 6 fl oz pineapple juice can
  • 2/3 c low-sodium soy sauce
  • 1/4 c brown sugar
    - light or dark - lightly packed
  • 1 Tbsp ginger
    - freshly grated, finely minced ginger or ginger paste
  • 1 Tbsp garlic
    - minced
  • 1 Tbsp Sake
    - you can substitute cooking Sherry
  • 2/3 c chicken broth
  • cornstarch slurry
    • 1 Tbsp cornstarch
    • 1 Tbsp cold water
  • garnish - optional
    • sesame seeds
    • green onion
      - sliced thin
    • pineapple wedges

Preparation Instructions


  • If you would like to double the recipe then double the ingredients for the sauce and cornstarch slurry. Place only 3 chicken on the pan per cooking session for best results.
  • Measure and prepare ingredients. Set aside.

  • In a medium bowl, combine pineapple juice, soy sauce, brown sugar, garlic and ginger. Place chicken in the marinade sauce. Cover the bowl with plastic wrap and refrigerate the marinade chicken for at least 4 hours.

  • Prepare cornstarch slurry in a small bowl, combine cornstarch and cold water. Whisk together.

  • Note: When you remove chicken from the marinade bowl and place in pan, reserve the marinade because it will be simmered to a sauce.

Cooking Instructions


  • Preheat to 329°F
  • Add 1/2 Tbsp olive oil to pan
  • Add marinated chicken pieces (3 pieces). Shake off as much liquid as you can before adding to the pan. Make sure to lay chicken flat in the pan.
  • Flip ingredients
  • Add 1 Tbsp Sake to pan
  • 2/3 c chicken marinade
  • Add 2/3 c chicken broth to pan
  • Flip ingredients
  • Add cornstarch slurry to pan
  • Whisk cornstarch slurry into the sauce
  • Flip ingredients
  • Add pineapple wedges for garnish - optional
  • Remove from heat

Finishing Instructions


  • If cooking more chicken then repeat the cooking instructions until all chicken cooked.
  • Drizzle the warm marinade over the chicken.
  • Serve chicken with rice.
