Equipment List


  • 6 qt pot
  • Spatula
  • Fine mesh strainer
  • Small bowl/Pyrex bowl
  • Mason jars for cocktails
  • Cocktail shaker for cocktails

Ingredients


  • Pineaple Simple Syrup
    • 1 c fresh pineapple
      - diced into 1/2" pieces
    • 1/2 c sugar
    • 1/2 c water
  • Maui Lani Tropical Cocktail
    • 1.5 oz Malibu
    • 1.5 oz Pineapple Simple Syrup
    • 4.5 oz Guava Juice
    • 3 oz spritzer
      - used coconut pineapple sparkling water
    • 1 tsp fresh mint
      - chopped
    • dark rum float
      - to taste and optional
    • 1 c ice
    • pineapple slices
      - for garnish
  • Maui Martini
    • 1 Tbsp brown sugar
    • 4.5 oz Malibu
    • 4.5 oz dark rum
    • 4.5 oz Kahlua
    • 1.5 oz Pineapple Simple Syrup
    • 8 pineapple slices
      - about 1" pieces

Preparation Instructions


  • Measure and prepare ingredients. Set aside.
  • Place pot on the stovetop. Add pineapple, sugar and water to the pot.

Cooking Instructions


  • Preheat to 167°F
  • Heat ingredients
  • Once your syrup is boiling then turn down to a simmer.
  • Remove pan from heat.

Finishing Instructions


  • Place fine mesh strainer on top of a bowl and strainer the pineapple syrup. Save the liquid in bowl. Throw away the pineapple pieces in the strainer.

  • Place liquid in an air tight container like a mason jar. Keep in the refrigerator for up to two weeks.

  • Maui Martini Recipe Serving 4 In a mason jar, add the following ingredients. 1 Tbsp brown sugar 4.5 oz Malibu 4.5 oz dark rum 4.5 oz Kailua 1.5 oz Pineapple Simple syrup 8 pineapple slices about 1" pieces Place the mixture in the refrigerator for at least 1 hour. Pour mixture into a cocktail mixer. Add ice and shake. Strain into martini glass and garnish with marinated pineapple.

  • Maui Lani Tropical Cocktail Add the following ingredients to a cocktail shaker or mason jar. 1.5 oz Malibu 1.5 oz Pineapple Simple Syrup 4.5 oz Guava Juice 3 oz spritzer - used a coconut pineapple sparkling water 1 tsp Mint chopped dark rum float - optional pour the dark rum to taste on top of the drink 1 c ice If not blended then pour into a shaker and strain into a glass. If blending, then blend till smooth. Pour into a glass or a cut pineapple.
