Equipment List


  • Large Dutch oven or heavy-bottom pot
  • Peeler
  • Cheese grater (optional)

Ingredients


  • 2 Tbsp olive oil
  • 3/4 c yellow onion
    - diced small
  • 3 c sweet potato
    - diced small to medium
  • 3 cloves garlic
    - minced
  • 1/8 c white wine
  • 1 lb ground turkey
  • 2 Tbsp chili powder
  • 1 tsp smoked paprika
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1/4 tsp crushed red pepper flakes
  • 1/8 tsp cayenne pepper
  • 1 1/2 c chicken stock
  • 1 15.5 oz can black beans
    - rinsed and drained
  • 1 15.5 oz can Navy beans
    - rinsed and drained
  • 28 ounce can fire-roasted diced tomatoes
    - with juices
  • Optional toppings
    - shredded cheddar cheese, sour cream, cilantro, tortilla strips, avocado chunks, green onions

Preparation Instructions


  • Peel and dice sweet potatoes

  • Dice onion
  • Mince garlic

Cooking Instructions


  • Preheat to 90°F
  • Add 2 Tbsp olive oil to pan
  • Add 3/4 c yellow onion to pan
  • Stir ingredients
  • Continue sautéing onions
  • Add 3 c sweet potato to pan
  • Stir ingredients to coat
  • Continue sautéing
  • Add 3 cloves garlic to pan
  • Stir ingredients
  • Add 1/8 c white wine to pan
  • Deglaze pan
  • Add 1 lb ground turkey to pan
  • Break up ground turkey as it cooks
  • Continue stirring and incorporating ingredients, breaking up ground turkey
  • Add 2 Tbsp chili powder and 1 tsp smoked paprika to pan
  • Add 2 tsp salt , 1/2 tsp black pepper , 1 tsp cumin and 1/4 tsp crushed red pepper flakes to pan
  • Stir ingredients
  • Add 1 1/2 c chicken stock to pan
  • Add 1 15.5 oz can Navy beans to pan
  • Add 1 15.5 oz can black beans to pan
  • Add 28 ounce can fire-roasted diced tomatoes to pan
  • Stir ingredients
  • Stir ingredients
  • Note: I do a little taste test here to see if I want to adjust my spices and seasonings.
  • As soon as chili begins to bubble, cover pot.
  • Uncover ingredients
  • Stir ingredients
  • Remove from heat and allow to thicken for a few minutes.

Finishing Instructions


  • Ladle into bowls and top with shredded cheddar cheese, sour cream, avocado chunks, green onions, cilantro, and tortilla strips.
