Equipment List


  • 12” deep nonstick saute pan
  • Plate
  • Grater

Ingredients


  • 3 6 oz pork steaks
    - cubed
  • To taste salt and pepper
  • 1 Tbsp fat
    - such as olive oil, butter, or lard
  • 1 medium onion
    - diced
  • 5 garlic cloves
    - minced
  • 1 shallot
    - thinly sliced
  • 1/4 c red wine
  • 1/4 c celery
    - diced
  • 1/2 tsp fresh ginger
    - peeled & grated
  • 1 zucchini
    - diced
  • 3 small tomatoes
    - quartered
  • 1 c coconut milk
    - divided into 1/2 c portions
  • 2 c Kashmiri sauce
    - available at your local grocery store

Preparation Instructions


  • Remove fat, and dice boneless pork steak.

  • Season meat on all sides with salt and pepper.

Cooking Instructions


  • Preheat to 93°F
  • Add 1 Tbsp fat to pan
  • Melt/heat the fat
  • Add 3 6 oz pork steaks to pan
  • Star browning one side
  • Stir 3 6 oz pork steaks
  • Note: It is important that the pork reaches an internal temperature of 145 degrees.
  • Remove meat, and let rest
  • Keep drippings
  • Add 1 medium onion to pan
  • Add 5 garlic cloves to pan
  • Stir ingredients
  • Sauté till golden brown
  • Add 1 shallot to pan
  • Add 1/4 c red wine to pan
  • Reduce wine
  • Add 1/4 c celery to pan
  • Add 1/2 tsp fresh ginger to pan
  • Add 1 zucchini to pan
  • Brown all ingredients
  • Stir ingredients
  • Add 3 small tomatoes to pan
  • Stir ingredients
  • Add 1 c coconut milk to pan
  • Reduce the coconut milk
  • Add 2 c Kashmiri sauce to pan
  • Simmer
  • Add 1 c coconut milk to pan
  • Reduce and simmer
  • Cover pork with the sauce
  • Serve with rice

Finishing Instructions


  • Serve over rice
