- 12” deep nonstick saute pan
- Plate
- Grater
Ingredients
- 3 6 oz pork steaks- cubed
- To taste salt and pepper
- 1 Tbsp fat- such as olive oil, butter, or lard
- 1 medium onion- diced
- 5 garlic cloves- minced
- 1 shallot- thinly sliced
- 1/4 c red wine
- 1/4 c celery- diced
- 1/2 tsp fresh ginger- peeled & grated
- 1 zucchini- diced
- 3 small tomatoes- quartered
- 1 c coconut milk- divided into 1/2 c portions
- 2 c Kashmiri sauce - available at your local grocery store
Preparation Instructions
- Remove fat, and dice boneless pork steak.
- Season meat on all sides with salt and pepper.
Cooking Instructions
- Preheat to 93°F
- Add 1 Tbsp fat to pan
- Melt/heat the fat
- Add 3 6 oz pork steaks to pan
- Star browning one side
- Stir 3 6 oz pork steaks
- Note: It is important that the pork reaches an internal temperature of 145 degrees.
- Remove meat, and let rest
- Keep drippings
- Add 1 medium onion to pan
- Add 5 garlic cloves to pan
- Stir ingredients
- Sauté till golden brown
- Add 1 shallot to pan
- Add 1/4 c red wine to pan
- Reduce wine
- Add 1/4 c celery to pan
- Add 1/2 tsp fresh ginger to pan
- Add 1 zucchini to pan
- Brown all ingredients
- Stir ingredients
- Add 3 small tomatoes to pan
- Stir ingredients
- Add 1 c coconut milk to pan
- Reduce the coconut milk
- Add 2 c Kashmiri sauce to pan
- Simmer
- Add 1 c coconut milk to pan
- Reduce and simmer
- Cover pork with the sauce
- Serve with rice
Finishing Instructions
- Serve over rice
