Creamy Spinach Parmesan Orzo

Equipment List
- Large pot or Dutch oven
Ingredients
- 1 Tbsp olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 16 oz orzo pasta
- 2 c chicken broth (low sodium)
- 2 c whole milk
- 1/4 c heavy cream
- 1/2 c white wine
- 2 c spinach leaves (chopped & packed)
- 1 1/2 c freshly grated parmesan cheese
- kosher salt to taste
- freshly ground black pepper to taste
- 1 Tbsp butter
Cooking Instructions
- Preheat to 90°F
- Add olive oil to pan
- Add 1 Tbsp butter to pan
- Add onion to pan
- Add garlic, orzo, salt, & pepper to pan
- Saute ingredients
- Add broth, milk, cream, & wine to pan.
- Stir ingredients.
- Cover & let simmer.
- Stir ingredients
- Add spinach & parmesan cheese
- Stir until combined.
- Add salt & pepper, if needed
Finishing Instructions
- Top with extra chopped spinach or parmesan cheese, if desired.
- To make a complete meal, add diced, cooked chicken.
