Equipment List
- Dutch oven or large pot
- Hamburger chopper
Ingredients
- 1 lb ground chicken
- 2 c chicken stock
- 15 ounce can Navy beans- rinsed & drained
- 1 packet ranch seasoning
- 1/4 c Buffalo wing sauce
- 1 c corn kernals- frozen or fresh
- 1/2 tsp onion powder
- 1/tsp garlic powder
- 1/2 tsp celery salt
- 1/4 tsp salt
- 1/4 tsp black pepper
- 8 ounces cream cheese- softened and cubed small
- 14.5 ounce can fire-roasted tomatoes
- 1 T cilantro- chopped, plus more for garnish
- 1/2 c Bleu cheese crumbles
Preparation Instructions
- Chop cilantro
- Cube cream cheese
Cooking Instructions
- Preheat to 92°F
- Add 1 lb ground chicken to pan
- Using hamburger chopper, break up chicken and cook through
- Add 2 c chicken stock to pan
- Add 15 ounce can Navy beans to pan
- Add 1 c corn kernals to pan
- Add 1 packet ranch seasoning to pan
- Add 1/4 c Buffalo wing sauce to pan
- Add 1/2 tsp onion powder , 1/tsp garlic powder , 1/2 tsp celery salt , 1/4 tsp salt and 1/4 tsp black pepper to pan
- Stir ingredients
- Add 8 ounces cream cheese to pan
- Stir ingredients
- Add 14.5 ounce can fire-roasted tomatoes to pan
- Stir ingredients and continue cooking, stirring frequently to break up cream cheese
- Add 1 T cilantro to pan
- Stir ingredients
Finishing Instructions
- Ladle intp bowls & top with bleu cheese crumbles & additional cliantro.
- If you want more heat, add additional buffalo wing sauce
