Equipment List
- Large Dutch oven or heavy-bottom pot
- Food processor
- Slotted spoon
Ingredients
- 12 slices bacon, diced- suggested not to use thick cut
- 1 small red onion- diced
- 1 shallot- diced
- 2 cloves garlic- minced
- 1/4 c bourbon
- 1/2 c brown sugar- packed
- 1/4 c pure maple syrup
- 1/2 c apple cider vinegar
Preparation Instructions
- Use food processor to dice onion and shallot
- Mince garlic
- Chop bacon
Cooking Instructions
- Preheat to 90°F
- Add 12 slices bacon, diced to pan
- Stir ingredients
- Stir ingredients
- Remove bacon to a plate lined with a paper towel (use slotted spoon)
- Remove all but 1 Tbsp of the bacon grease from pot
- Add 1 small red onion and 1 shallot to pan

- Add 2 cloves garlic to pan
- Stir ingredients
- Add 1/4 c bourbon to pan
- Deglaze pan
- Add 1/4 c pure maple syrup to pan
- Add 1/2 c brown sugar to pan
- Add 1/2 c apple cider vinegar to pan
- Stir ingredients
- Add cooked bacon back to pot
- Stir ingredients
- Stir ingredients

Finishing Instructions
- Allow to cool completely.
- Store in air-tight container.
- Serve on toast or burgers.
