- 6 qt stockpot
- Bowl for serving
Ingredients
- 1 Tbsp sesame oil
- 2 cloves garlic- minced
- 1 Tbsp fresh ginger- minced
- 2 scallions- white and green parts separated and sliced
- 1 Tbsp Gochujang- this is a Korean chili paste or you can use other chili paste - can be omitted if you can't find it
- 1-1/2 Tbsp miso paste- white miso or red miso
- 1 c oat milk- soy or any other plant-based milk can be used
- 2 c water- you can use vegetable broth if you want more flavor
- 1 Tbsp Japanese chili oil- Rayu or other chili oil - if you would like spice
- 3 dried shiitake mushroom
- 1 Tbsp soy sauce- or coconut amino
- 1 instant ramen noodles- toss the soup packet
- nori strips- optional for garnish
- furikake- optional for garnish
- canned corn- optional for garnish - drain corn
- 1 boy choy- optional for garnish or other green vegetable - cut boy choy in half
- 3 Tbsp plant-based butter
Preparation Instructions
- Measure and prepare ingredients. Set aside.
Cooking Instructions
- Preheat to 329°F
- Add 1 Tbsp sesame oil to pan
- Add 2 cloves garlic to pan
- Add 1 Tbsp fresh ginger to pan
- White part of scallion
- Stir ingredients
- Stir ingredients
- Add 1 Tbsp Gochujang to pan
- Add 1-1/2 Tbsp miso paste to pan
- Stir ingredients
- Note: Mix until well combined
- Note: When adding the oat milk, add in a little at a time to be able to combine the paste and milk well.
- A little oatmilk
- Stir ingredients
- Little more oat milk
- The rest of the oatmilk
- Add 2 c water to pan
- Note: Bring broth to a boil
- Add 3 dried shiitake mushroom to pan
- Note: Once the broth is boiling then reduce to a simmer
- Stir ingredients
- Add 1 instant ramen noodles to pan
- Add 1 boy choy to pan
- Remove from heat
Finishing Instructions
- Add plant-based butter
- Taste broth and add spice like chili oil to taste. Also add soy sauce to taste or add more water if broth is too thick.
- Place noodles and soup in a bowl then add boy choy
- Add shiitake mushrooms
- Add corn, furikake, nori strips or other garnishes for the ramen
- Serve immediately.
