Ingredients
- 3 Tbsp olive oil
- 10 oz plant-based meatballs (Italian style)- about 12 meatballs
- 1 c yellow onion- chopped
- 1 c carrots- diced
- 1 c celery- diced
- 3 cloves garlic- minced
- 1 can tomato sauce- about 8 oz
- 32 oz vegetable stock
- 1/2 c water
- 1 can Italian diced tomatoes- about 15 oz
- 1-1/2 tsp dried basil
- 1 tsp dried oregano
- 3/4 tsp dried thyme
- 1 tsp dried marjoram
- salt- to taste
- pepper- to taste
- 1 c ditalini pasta- cooked
- 1 can dark red kidney bean- drained and rinsed, about 15 oz
- 1 can great northern beans- drained and rinsed, about 15 oz
- dairy-free Parmesan cheese- shredded
- 3 Tbsp parsley- minced for garnish
Preparation Instructions
- Measure and prepare ingedients. Set aside.
- Drain and rinse - kidney beans and northern beans
- Cook ditalini pasta according to package. Drain and set aside. Cook to al dente
Cooking Instructions
- Preheat to 261°F
- Add 3 Tbsp olive oil to pan
- Add 10 oz plant-based meatballs (Italian style) to pan
- Flip ingredients

- Note: remove meatballs and set aside
- Add 1 c yellow onion to pan
- Stir ingredients
- Add 1 c carrots to pan
- Add 1 c celery to pan
- Stir ingredients
- Add 3 cloves garlic to pan
- Add 32 oz vegetable stock to pan
- Add 1 can tomato sauce to pan
- Add 1 can Italian diced tomatoes to pan
- Add 1/2 c water to pan
- Stir ingredients
- Add 1-1/2 tsp dried basil , 3/4 tsp dried thyme , 1 tsp dried oregano and 1 tsp dried marjoram to pan
- Stir ingredients
- Note: Bring soup to a boil and add salt & pepper to taste
- Stir ingredients
- Note: Once soup is boiling then bring it down to a simmer
- Stir ingredients
- Stir ingredients
- Note: Add drained kidney beans and northern beans
- Note: Add meatballs back in
- Note: Add cooked pasta to the soup
- Note: Remove from the heat
Finishing Instructions
- Serve immediately.
- Add Parmesan cheese and parsley as garnish.
