Equipment List
- 10' or 12" nonstick skillet
- Large spatula
Ingredients
- 1 large tomato- thinly sliced
- 1/2 t salt
- 2 large eggs- beaten
- 1/4 t black pepper
- 1/4 t onion powder
- 1/2 c fresh spinach leaves
- 1 c pepper jack cheese- shredded
- 1/2 avocado- sliced
- 1 large flour tortilla
Preparation Instructions
- Whisk eggs
- Shred cheese
- Slice tomato
- Slice avocado
Cooking Instructions
- Preheat to 197°F
- Spray pan with olive oil nonstick cooking spray
- Add the tomato slices in a single layer across the pan
- Sprinkle the salt over tomato slices
- Add beaten eggs to pan
- Tilt pan to spread egg mixture, ensuring tomatoes are completely surrounded
- Sprinkle black pepper & onion powder over eggs
- Lay spinach leaves evenly over egg
- Add 1 c pepper jack cheese to pan
- Lay avocado slices across egg, spreading evenly
- Add tortilla on top of eggs
- Run spatula around edges to loosen
- Carefully flip quesadilla over
- Fold quesadilla in half
Finishing Instructions
- Using pizza cutter or knife, cut quesadilla into 4 pieces
- Serve with salsa and sour cream
