Equipment List
- Large nonstick or cast iron skillet
- Baking sheet lined with parchment paper
Ingredients
- 4 Tbsp butter- divided
- 1/4 c chopped pecans
- 1/2 c rolled oats
- 3 Tbsp brown sugar- packed
- 2 Tbsp shredded coconut
- 1 tsp cinnamon- divided
- 4 firm peaches- pitted and peeled
- 1 Tbsp lemon juice
- 1/2 tsp pure vanilla
- 1 1/3 c fresh blackberries
Preparation Instructions
- Peel, pit, & slice peaches
Cooking Instructions
- Preheat to 88°F
- Add 2 Tbsp of the butter to pan
- Stir to melt butter
- Add 1/4 c chopped pecans to pan
- Add 1/2 c rolled oats to pan
- Add 2 Tbsp shredded coconut to pan
- Add 1 Tbsp brown sugar to pan
- Add 1/2 tsp cinnamon to pan

- Note: Carefully monitor temperature of granola during this stage. Granola is very sensitive to heat and can burn quickly.
- Stir ingredients
- Remove pan from heat and place oat mixture on a parchment-lined baking sheet
- Carefully wipe pan clean and return to stovetop
- Add remaining 2 Tbsp of butter to pan
- Stir ingredients
- Add 1/2 tsp pure vanilla to pan
- Add sliced peaches to pan
- Add remaining 2 Tbsp brown sugar to pan
- Add 1 Tbsp lemon juice to pan
- Add remaining 1/2 tsp cinnamon to pan

- Add 1 1/3 c fresh blackberries to pan
- Gently fold in blackberries
- Note: If you prefer the blackberries to have a slightly softer texture, cook for another minute or two.
- Remove from heat
Finishing Instructions
- Scoop into bowls and top with prepared oat and nut mixture.
- Top with ice cream.
