Equipment List
- Dutch oven or large pot
- Cheese grater
Ingredients
- 1 Tbsp butter
- 1/4 c onion- finely diced
- 2 cloves garlic- minced
- 2 large roma tomatoes- diced
- 12 oz can evaporated milk
- 16 oz cheddar cheese- shredded
- 4 oz pepper jack cheese - shredded
- 1 Tbsp cornstarch, dissolved in 1 T water
- 1/2 tsp onion powder
- 1 Tbsp chili powder
- 3/4 tsp cumin
- 1/2 tsp garlic powder
- 1 can green chiles- drained
- 1 jalapeno- seeded & finely diced
- 4 Tbsp whole milk
- 2 Tbsp cilantro- finely chopped
- 1 Tbsp Tajin
Cooking Instructions
- Preheat to 105°F
- Add 1 Tbsp butter to pan
- Note: Melt completely
- Add 1/4 c onion and 2 cloves garlic to pan, saute for a minute or two
- Add 2 large roma tomatoes to pan
- Stir ingredients and cook for approx 2 minutes until softened
- Add 1 jalapeno and 2 cloves garlic to pan
- Stir ingredients and cook for approx a minute until slightly softened
- Add 12 oz can evaporated milk, 16 oz cheddar cheese, 4 oz pepper jack cheese , 1 Tbsp cornstarch, dissolved in 1 T water, 1/2 tsp onion powder, 1 Tbsp chili powder , 3/4 tsp cumin, 1/2 tsp garlic powder, and 1 Tbsp Tajin to pan and stir until melted
- Add 4 Tbsp whole milk to pan
- Stir ingredients
- Add 1 can green chiles to pan
- Stir ingredients
- Taste test, add salt to taste and any additional spices to bring the heat to your liking
Finishing Instructions
- Serve with tortilla chips. Homemade tortilla chips add an extra dose of YUM!
