Equipment List


  • Dutch oven or large pot
  • Cheese grater

Ingredients


  • 1 Tbsp butter
  • 1/4 c onion
    - finely diced
  • 2 cloves garlic
    - minced
  • 2 large roma tomatoes
    - diced
  • 12 oz can evaporated milk
  • 16 oz cheddar cheese
    - shredded
  • 4 oz pepper jack cheese
    - shredded
  • 1 Tbsp cornstarch, dissolved in 1 T water
  • 1/2 tsp onion powder
  • 1 Tbsp chili powder
  • 3/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1 can green chiles
    - drained
  • 1 jalapeno
    - seeded & finely diced
  • 4 Tbsp whole milk
  • 2 Tbsp cilantro
    - finely chopped
  • 1 Tbsp Tajin

Cooking Instructions


  • Preheat to 105°F
  • Add 1 Tbsp butter to pan
  • Note: Melt completely
  • Add 1/4 c onion and 2 cloves garlic to pan, saute for a minute or two
  • Add 2 large roma tomatoes to pan
  • Stir ingredients and cook for approx 2 minutes until softened
  • Add 1 jalapeno and 2 cloves garlic to pan
  • Stir ingredients and cook for approx a minute until slightly softened
  • Add 12 oz can evaporated milk, 16 oz cheddar cheese, 4 oz pepper jack cheese , 1 Tbsp cornstarch, dissolved in 1 T water, 1/2 tsp onion powder, 1 Tbsp chili powder , 3/4 tsp cumin, 1/2 tsp garlic powder, and 1 Tbsp Tajin to pan and stir until melted
  • Add 4 Tbsp whole milk to pan
  • Stir ingredients
  • Add 1 can green chiles to pan
  • Stir ingredients
  • Taste test, add salt to taste and any additional spices to bring the heat to your liking

Finishing Instructions


  • Serve with tortilla chips. Homemade tortilla chips add an extra dose of YUM!
