Homemade Enchilada Sauce

Equipment List
- 8-10" pan
- Large pot or dutch oven
- Whisk
Ingredients
- 12 Tbsp butter
- 9 heaping Tbsp flour- approx 2/3 c
- 6 c water
- 8 beef bouillon cubes
- 1 oz packet plus 2 Tbsp of another packet Williams Original Chili Seasoning- no substitutions
Cooking Instructions
- Preheat to 168°F
- Add 12 Tbsp butter to pan
- Add 9 heaping Tbsp flour to pan
- Stir ingredients to make a roux
- Stir ingredients occasionally as mixture thickens
- Remove heat and set aside
- Place large lot on hot burner
- Add 6 c water to pan
- Add 8 beef bouillon cubes to pan
- Add 1 oz packet plus 2 Tbsp of another packet Williams Original Chili Seasoning to pan
- Whisk ingredients
- Add roux back to boiling mixture
- Whisk ingredients
- Whisk occasionally as mixture thickens
- Remove from heat
Finishing Instructions
- Use to assemble enchiladas and bake.
- Add 2 pounds of shredded white American cheese to create queso.
