Equipment List


  • 8-10" pan
  • Large pot or dutch oven
  • Whisk

Ingredients


  • 12 Tbsp butter
  • 9 heaping Tbsp flour
    - approx 2/3 c
  • 6 c water
  • 8 beef bouillon cubes
  • 1 oz packet plus 2 Tbsp of another packet Williams Original Chili Seasoning
    - no substitutions

Cooking Instructions


  • Preheat to 168°F
  • Add 12 Tbsp butter to pan
  • Add 9 heaping Tbsp flour to pan
  • Stir ingredients to make a roux
  • Stir ingredients occasionally as mixture thickens
  • Remove heat and set aside
  • Place large lot on hot burner
  • Add 6 c water to pan
  • Add 8 beef bouillon cubes to pan
  • Add 1 oz packet plus 2 Tbsp of another packet Williams Original Chili Seasoning to pan
  • Whisk ingredients
  • Add roux back to boiling mixture
  • Whisk ingredients
  • Whisk occasionally as mixture thickens
  • Remove from heat

Finishing Instructions


  • Use to assemble enchiladas and bake.
  • Add 2 pounds of shredded white American cheese to create queso.
