- 9 inch skillet, deep
Ingredients
- 2 tablespoons butter
- 2 cups carrots, shredded
- 2 shallots, sliced- or half medium onion
- 1 stalk celery- Finely chopped
- small can whole peeled tomatoes in juice- 14.5 oz
- 5 sprigs thyme
- 1 cup clam juice
- 1/2 pound white fish, cod or similar- skinless, cut into 1 1/2 inch pieces
- 1/4 teaspoon fresh ground pepper
- 1/4 teaspoon sea salt
- 1/2 teaspoon lemon zest
Preparation Instructions
- Prep and slice vegetables
- Cut cod into 1-2” pieces
Cooking Instructions
- Preheat to 190°F
- Add 2 tablespoons butter to pan
- Stir ingredients
- Add 2 cups carrots, shredded to pan
- Stir ingredients
- Add 2 shallots, sliced to pan
- Stir ingredients
- Stir ingredients
- Add 1 stalk celery to pan
- Stir ingredients
- Add small can whole peeled tomatoes in juice to pan
- Stir ingredients
- Add 5 sprigs thyme to pan
- Add 1 cup clam juice to pan
- Add 1/2 pound white fish, cod or similar to pan
- Add 1/4 teaspoon fresh ground pepper to pan
- Add 1/4 teaspoon sea salt to pan
- Stir ingredients
- Add 1/2 teaspoon lemon zest to pan
- Remove ingredients from pan
Finishing Instructions
- Serve with garlic toast
